A good mechanic should factor that into his labor and parts . Original motor mounts may already be compromised , removing and replacing an engine can further damage or compromise the mount and it is the LABOR COST of REMOVING AND REPLACING THE ENGINE not the motor mount itself that is costly.
It is pennywise POUND FOOLISH to install a new engine on an old motor mount( just hoping the engine mount doesn't fail) . If it DOES FAIL , you end up paying to remove and replace the engine TWICE...PLUS a new set of motor mounts anyway. How dumb is that?
Technically, the mechanic could claim that a motor mount failed because it wasn't replaced and "technically" not a required part of the job. On the other hand, you could claim that it failed because of a poor installation job and trauma to it during install/removal . Frankly, that is a "slippery slope" for both of you , and will STILL require more labor and expense.
"Bottom line" ?....replace the mounts . THEN, if they DO fail , the mechanic will have to correct it at HIS expense. Peace.
While replacing engine mounts might be convenient when the engine is out, that isn't always part of replacing the engine. Replace what you need to replace.

No. No peripherals are part of the job. Included would be mounts, radiator, fan, hoses, transmission, A/C components, PS components and so on. These parts must be approved by the owner first. Some stuff is included such as oil and filter.
