I say take the $8,500 and then you'll have the title and vehicle to sell. Parting it out takes a long time and a lot of work. But it doesn't look extremely damaged. So you sell it as a 'builder' on ebay and I think it would get $3000-$4000 pretty easy. Can't see the rest of it, but looks like it's the LTZ package or something like that.
If you have the time and want to, you could probably part it all out piece by piece and make $5,000. But it would take a bunch of work and 6 months to do probably.
But if you NEED that $3k towards getting you a vehicle replacement. Then just take the $11,500.
So it just depends on how much work you're willing to do to make an extra $1000-2000.

I just saw the pics; Your car is damaged but not much. It can be repair and looks just like before. If you know that the performance of your car is good before then my suggestion is to keep it with you Because it might take some time to repair but it can run like before.
It does not look like too much damage, but since it is totaled, I would guess the engine is damaged. If the engine is still good, I would say you could probably make some money on it.
Everybody gets hit in the front (most common) so the popular parts are already wrecked. The rest of the parts will bring in quite a bit of money. But it will take some and you will have to store the parts and find buyers and haggle with them. Some people may not consider it worth the trouble

My 05 Chevy Tahoe was wrecked, and has been declared a total loss by the insurance. They will pay me $11,500 if they keep the vehicle, or $8,500 if I keep it. I'm thinking I could get well over $3K if I were to part it out?? It had 131K miles, and was in good shape, and ran like new before the accident. What do you think I should do?. Here's the pics:
