Rebuilding a car is never easy.
If you're into muscle cars, you could start rebuilding an old Charger or Camaro. If you like Japanese vehicles, one of the most popular project cars is the Nissan 240sx. If you want to go the euro route, you could try doing an old VW Beetle.
For the past year my dad and I have been rebuilding a 1984 volkswagen rabbit convertible, I love it. If you want something simpler, the old VW beelte is really easy and fun to work on.
Nothing will be easy related to automotive work. Just buy a good junk car and learn from it every step of the way. No need to waste money on it so much as you use it to learn for the next car.
