The operating temperature of the engine is controlled by the thermostat so anything in contact with the engine coolant will maintain a pretty close relationship to that, 195 F or about 95 C. The exhaust manifolds and system will obviously be much higher.
The cylinder head most certainly will reach 300 C near the exhaust ports, a lot higher in sustained high speed driving.
depends on what parts. aluminium cyl head for example can reach over 300 C. exhaust manifold over 650 C.
rocker cover section can go up around 170 C. and so on. look at high temperature paints as a starting point . e.g. those suitable of calliper braking ( discs) will be best. exhaust manifolds need special coatings.
Use auto engine paint
I have a 2.0l, dual overhead cam, in line 4 cylinder engine. I have plans on painting various parts of the engine bay, some part come in contact with the engine.
All I want to know is what temperature it can reach.
