have you looked into a Stripped output shaft and/or stripped transfer case input sleeve? could be letting you think its a clutch issue cause if its stripped basicly its not gripping and just slipping so even sitting still the engine wouldn't stall cause its still spinning even tho its not spinning that parts that cause the car to move... id be crawling under the vehicle and see whats working and whats not lol.... grab a hold of a few things and turn them. a car only stalls out cause when you go too slow engine cant turn like it needs to so you press the clutch pedal to disengage the transmission from transmission so engine can spin freely as it needs to without the car holding it back... so same concept.. if the couplers are stripped out or whatever then nothing is holding it back. and obviously it cant move etheir.
maybe the transfer case is bad... id start testing things.... see whats bad... or if its not along those lines then basicly the car clutch wasn't put together right to begin with and then your mechanic just put it back together the way it came apart so its still wrong..... you just need to start looking at things... see whats wrong.... test some parts out.
I'd say either the pressure plate is defective (re-man or new?) or he put the disc in bass-ackwards. Will be marked "this side to flywheel".Also, make sure release (throwout) bearing is correct length, and correctly installed. This ain't rocket science.

He might have gotten something wrong when he installed the clutch.
First guess is that it was installed improperly. Do you have any free play?

Last month I bought a mitsubishi 3000gt that ran but was told the clutch was bad and should have it towed. After being given the "we're busy for the next decade" dance by every shop in town, i turned to a friend of a friend who does wrench work at home on the side. He replaced the clutch, which was near the end of its life, but didnt appear to be bad enough to disable the car. Now the clutch starts to engage when you let the pedal out, but it only let's the car roll forward a bit then nothing. The tranny shifts fine but the clutch only engages partially, and you can let it all the way out and no stalling or noises. He bled the hydro fluid and tried to adjust the pedal, master cylinder etc to no avail. What could cause this?
