I think you are saying that your coolant is still leaking. You should not be putting just water in the coolant system except in an emergency. Coolant goes in there.
If you are still losing coolant it means you still have a leak in the coolant system.
You say it overheated again. Was the coolant level low again after it overheated?
If you do not have a leak in a coolant hose and have gradually replaced coolant so that there is mostly just water in there then you should go into a repair shop for a coolant flush and replacement.
have you checked the thermostat?
If that thermostat doesn't open correctly it will not let your engine cool correctly either.
Check your oil to see if you have water in your oil.
That is usually a sign of a bad head gasket.
Sure would have been nice to tell us what you drive. We have access to tech lines that help diagnose every make of vehicle and motor in them. We could have listed common problems for you to have a mechanic look for. You never put straight water in the cooling system. It dilutes the antifreeze too much and the lubricants that keep the water pump seal from frying lose their effectiveness and you end up with a bill to replace the water pump. You need the cooling system pressure tested to see where the coolant is going. I wouldn't be surprised if you neglected the maintenance long enough that you have a major repair bill to fix this.
Check your oil. If you've had a recent oil change there is a chance that the shop put the oil in until the dipstick read that it was full, but never turned your car on to let the fresh oil pump into the car and let the new oil filter fill. This would then cause there to be too little oil in the oil reservoir and in turn causing your car to over heat.

At first it would over heat because there wasn't enough water in it which is understandable. Then I got it fixed. There was a leak in the water pipe and that got fixed. After that I filled up the tank with coolant and for weeks it was running fine. Then today it was lowm I filled it up with water. And it was fine. Then I put gas in my tank. I filled it. And 10 mins later. It over heated.
