Metal detectors can detect any material that is a good conductor of electricity. This includes, but is not limited to, just about every metal on the periodic table, and just about all alloys made from them. It doesn't matter whether or not such a metal is magnetic like ferrous iron, or not.
Stainless steel is an alloy of primarily iron, chromium, and nickel, many variants of which are non-magnetic. This is due to the nickel's magnetism being opposite of the iron's magnetism, and nullifying it.
That still doesn't fool a metal detector, because a metal detector doesn't limit itself to the metal's own magnetism. Otherwise it would be called an iron detector.
You might want to try getting a pure diamond knife. It is still very strong like a metal knife, in fact stronger. And it is an electrical insulator.
A metal detector will find a pocket knife, but if its super rusty and old you could easily detect right over it if you are using iron discrimination.
